Chicken Alfredo Recipe

Consider Bernardus Chardonnay We love the flavors of lemon and pear and the long creamy finish of this Chardonnay. This delightful wine is a rich treat that will help bring out the flavors of this alfredo pasta dish.
Ingredients: 4 boneless chicken breasts (cut into pieces) 3 tablespoons olive oil salt and pepper (to taste) 8 oz Cream cheese -- cut in bits 3/4 cup fresh parmesan cheese -- shredded 1/2 cup margarine 1/2 cup whipping cream 4 ounces sliced button mushrooms 2 garlic cloves, minced 1/2 cup dry white wine 8 oz Fettuccine; cooked and drained
Instructions: 1. Saute chicken in 3 tablespoons olive oil until done. Season with salt and pepper. Set aside. 2. Combine cream cheese, parmesan cheese, margarine, whipping cream, mushrooms, garlic, and wine in a large saucepan. Cook over low-medium heat until smooth and as thick as desired. Stir constantly. 3. Add chicken to the sauce. Pour sauce over the cooked fettuccine. Mix well. Salt and pepper to taste.
