This chicken and rice recipe is a dish that is sure to please. Comfort food that everyone will love.
Ingredients for Chicken:
3 tablespoons butter
3 tablespoons olive oil
1/2 cup flour
1 teaspoon minced garlic
1 teaspoon paprika
1/2 teaspoon freshly ground pepper
3 pounds of chicken pieces
chopped Italian parsley
Instructions for chicken:
1. Preheat oven to 400 degrees.
2. Add butter and oil to a baking pan. Melt butter in the oven.
3. Combine flour, garlic, paprika, and pepper. Rinse chicken. Pat dry. Shake a few pieces at a time in the flour to coat each piece evenly.
4. Add chicken to pan. Bake,uncovered, for about 50 minutes.
5. Lay rice and chicken on a large serving platter. Sprinkle with chopped parsley.
Ingredients for rice:
3 slices bacon, diced
1 small red onion, chopped
1 cup long-grain white rice
1 cup chicken broth
1/2 cup dry white wine
1/2 cup water
Instructions for rice:
1. Cook bacon in a large frying pan. Add onion and rice. Cook until rice is golden brown, approximately 10 minutes.2. Add chicken broth, wine and water. Bring to a boil.
3. Reduce the heat and cover with a lid. Simmer until rice is tender and the liquid has been absorbed; approximately 20 minutes.
